  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 24 miniature peanut butter cups, unwrapped
  • 1/4 cup semi-sweet chocolate chips
  • 48 candy eyes

Instructions

  1. Preheat oven to 350°F and line two baking sheets with parchment paper.
  2. Cream together softened butter, granulated sugar, and light brown sugar until fluffy.
  3. Mix in creamy peanut butter, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until combined.
  5. Roll dough into 1-inch balls and place on prepared baking sheets.
  6. Bake for 9-11 minutes until edges are golden. Press a peanut butter cup into the center of each warm cookie.
  7. Let cool for 5 minutes on the sheets before transferring to a wire rack.
  8. Melt chocolate chips and use to attach candy eyes to each cookie. Pipe legs with chocolate on either side of the peanut butter cup.
  9. Allow the chocolate to set before serving.
