Ingredients
- 3 pounds butternut squash
- 1/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1/4 cup unsalted butter
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup all-purpose flour
- 1/2 cup old-fashioned rolled oats
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
- Boil butternut squash cubes in water for 15-20 minutes until tender; drain well.
- In a mixing bowl, mash the drained squash and mix in granulated sugar, brown sugar, melted butter, milk, vanilla extract, cinnamon, and nutmeg until smooth.
- Spread the mashed mixture evenly into the prepared baking dish.
- In another bowl, combine flour, brown sugar, oats, and pecans; drizzle in melted butter and mix until crumbly.
- Sprinkle the topping over the squash mixture.
- Bake for 25-30 minutes until golden brown on top and heated through.
