  • 2 stalks celery
  • 3 carrots
  • 1 pound small gold potatoes
  • 2 cloves garlic
  • 1 cup beef broth
  • 1 cup Irish stout beer
  • 1 tablespoon Worcestershire sauce
  • Fresh herbs (bay leaf, thyme, rosemary)

Instructions

  1. Toss beef stew meat with flour, salt, and pepper in a bowl.
  2. Heat olive oil in a skillet over medium-high heat. Brown beef cubes on all sides for about 2-3 minutes per side. Transfer to slow cooker.
  3. Add onion, celery, carrots, potatoes, and garlic to the slow cooker.
  4. Pour in beef broth, Irish stout beer, Worcestershire sauce, bay leaf, and thyme. Stir gently to combine.
  5. Place rosemary sprigs on top.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  7. Remove bay leaf and rosemary before serving. Garnish with parsley.
