Ingredients

Scale
  • 2 pounds beef short ribs
  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 4 cups beef broth
  • 1 cup dry red wine (or additional beef broth)
  • 1 cup Gruyère cheese, shredded
  • Fresh parsley, for garnish
  • Salt and pepper to taste

Instructions

  1. Season short ribs with salt and pepper. Heat olive oil in a heavy pot over medium-high heat. Sear short ribs until browned on all sides, then set aside.
  2. In the same pot, add sliced onions and cook over medium heat until caramelized (20–25 minutes). Add minced garlic and thyme; cook for an additional minute.
  3. Deglaze the pot with red wine, scraping any browned bits off the bottom. Return short ribs to the pot and add beef broth, Worcestershire sauce, and bay leaf. Bring to a boil, then reduce heat and simmer for 2–3 hours until meat is tender.
  4. Shred the cooked meat from the bones using two forks and return it to the soup, adjusting seasoning as needed.
  5. Serve hot by ladling into bowls, topping with toasted French bread slices and shredded Gruyère cheese. Broil until cheese is bubbly.
