  • ½ cup all-purpose flour

  • ½ cup butter, melted
  • 5 ounces evaporated milk
  • 3.4 ounces instant lemon pudding
  • 2 (8 ounces) cream cheese packages
  • ¾ cup frozen lemonade concentrate
  • 1 ½ cups fresh blueberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 350°F and spray an 8×8 baking dish with non-stick spray.
  2. For the crust, mix brown sugar, flour, pecans, and melted butter in a bowl until combined. Press into the bottom of the dish and bake for 15 minutes until golden brown. Let cool.
  3. In one bowl, combine evaporated milk and instant lemon pudding; beat until thickened. In another bowl, beat cream cheese until fluffy and gradually add frozen lemonade concentrate. Fold in pudding mixture until smooth.
  4. Spread the filling over the cooled crust.
  5. For the topping, cook blueberries, granulated sugar, lemon juice, and cornstarch in a saucepan over medium heat until thickened (about 5–7 minutes). Cool before pouring over the filling.
  6. Refrigerate for at least 4 hours before serving.
