  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter (very cold)
  • 6 medium Granny Smith apples
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice
  • 1 large egg (for egg wash)
  • Coarse turbinado sugar (for sprinkling)

Instructions

  1. To make the pie crust, combine flour and salt in a bowl. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Divide, shape into discs, wrap in plastic, and chill for at least 30 minutes.
  2. For the filling, mix sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice.
  3. Roll out one disc of dough and fit it into a pie dish. Roll out the second disc and cut it into strips for the lattice.
  4. Fill the crust with apple mixture and dot with butter. Weave the lattice strips over the filling.
  5. Crimp edges to seal; brush with egg wash and sprinkle with turbinado sugar.
  6. Bake at 425°F for 15 minutes; reduce to 375°F for another 40-50 minutes until golden brown.
  7. Cool completely on a wire rack before slicing.
