  • ½ cup pecan halves
  • Olive oil, salt, and pepper

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss butternut squash cubes with olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
  3. Rinse wild rice blend; cook with 2 cups of chicken broth in a saucepan according to package instructions.
  4. In a large skillet, heat remaining olive oil over medium-high heat. Cook chicken pieces seasoned with salt and pepper for about 5-7 minutes until golden; set aside.
  5. Sauté onion in the same skillet for 3-5 minutes; add garlic and cook for an additional minute.
