  • 2 cups apple cider (reduced to 1/4 cup)
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Reduce apple cider in a saucepan over medium heat until it thickens to about 1/4 cup; let cool.
  2. Mix together granulated sugar and cinnamon for coating; set aside.
  3. Cream butter and sugars until fluffy. Add egg, vanilla, and cooled cider; mix well.
  4. In another bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt. Combine with wet ingredients until just mixed.
  5. Chill dough for at least 30 minutes.
  6. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. Roll dough into tablespoon-sized balls, coat in cinnamon sugar, and place on the baking sheet.
  8. Bake for 8-10 minutes until edges are golden but centers are set; cool slightly before transferring to a wire rack.
  9. Drizzle cooled cookies with glaze made from powdered sugar and remaining reduced cider.
